Matt and I are not big cake eaters, but we both loved this cake! And our kids, who are big cake eaters, loved it too. They actually helped me make this cake and were so thrilled when their creation turned out to be so tasty. It would be a great addition to your Thanksgiving feast. You could also leave off the glaze and serve it as a breakfast bread. Hope you enjoy!
Ingredients:
1/2 cup butter melted
1 cup sugar
2 eggs
3 ripe bananas, mashed
1/2 can pumpkin
1 large apple, peeled and chopped
Dry ingredients:
2 cups all-purpose flour
1tsp pumpkin pie spice
1/2 tsp cinnamon
1tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
Directions:
Preheat oven to 350. Mix together first 5 ingredients in an large mixing bowl. In a separate bowl, combine dry ingredients and mix until well blended. Add dry ingredients to the large mixing bowl 1/3 at a time, mixing each time. (I do this to prevent flour from covering the kitchen when the mixer is turned on) Fold in chopped apples.
Transfer to a greased bundt pan and bake for 40-45 minutes. While cake is baking, prepare cream cheese glaze.
Glaze:
4oz cream Cheese softened
2.5 cups confectioners sugar
1/2 tsp vanilla
2T water
Mix until well blended. Glaze should drip off of the spoon. (Add more water if needed.)
Once cake has cooled, drizzle with glaze and serve.
