Matt and I are not big cake eaters, but we both loved this cake! And our kids, who are big cake eaters, 😉 loved it too. They actually helped me make this cake and were so thrilled when their creation turned out to be so tasty. It would be a great addition to your Thanksgiving feast. You could also leave off the glaze and serve it as a breakfast bread. Hope you enjoy!
Ingredients:
1/2 cup butter melted
1 cup sugar
2 eggs
3 ripe bananas, mashed
1/2 can pumpkin
1 large apple, peeled and chopped
Dry ingredients:
2 cups all-purpose flour
1tsp pumpkin pie spice
1/2 tsp cinnamon
1tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
Directions:
Preheat oven to 350. Mix together first 5 ingredients in an large mixing bowl. In a separate bowl, combine dry ingredients and mix until well blended. Add dry ingredients to the large mixing bowl 1/3 at a time, mixing each time. (I do this to prevent flour from covering the kitchen when the mixer is turned on) Fold in chopped apples.
Transfer to a greased bundt pan and bake for 40-45 minutes. While cake is baking, prepare cream cheese glaze.
Glaze:
4oz cream Cheese softened
2.5 cups confectioners sugar
1/2 tsp vanilla
2T water
Mix until well blended. Glaze should drip off of the spoon. (Add more water if needed.)
Once cake has cooled, drizzle with glaze and serve.
