Yum, yum, yum! I decided to take a dish I rarely make but love and add one of my favorite flavors, balsamic vinegar, to it, and just like that, a new favorite dish was created. The meatloaf was flavorful and not dry at all (there’s a word for this, but I really hate using it to describe food- hah). I think you and your family will love it! The sweet potato mash is super simple and was a big a hit as well. Honestly, I think it pairs better with green beans, but we had plenty of roasted broccoli leftover, so that’s what I put with it this time. Hope you enjoy!
Meatloaf
Ingredients:
1lb ground beef
1- 6oz. can tomato paste
1/2 sweet onion, finely minced
2 cloves garlic, minced
1/2 cup panko breadcrumbs
1 egg
1tsp salt
1tsp Italian seasoning
1/3 cup ketchup
1T balsamic vinegar
2tsp brown sugar
Directions:
Preheat oven to 375. Add first 8 ingredients to your mixer and mix on low until well blended. In a separate bowl, combine ketchup, vinegar and brown sugar. Form meat mixture into a loaf on a well-greased baking sheet. Cover with sauce. Bake for 1 hour.
Sweet Potato Mash
Ingredients:
4 small sweet potatoes (or 2 large ones)
2T butter
2T honey
2T milk (more if needed)
Directions:
Peel and slice potatoes into 2-inch square chunks. Add to a pot, cover with water and a pinch of salt. Bring to a boil. Boil for 10 minutes or until potatoes can be easily pierced with a fork. Drain. Return to pan. Add butter, honey and milk. Mash with a potato masher to desired consistency. Serve.
