This recipe is one of the many reasons why we love Hello Fresh. I have never been a huge fan of dill, nor do I typically love Dijon mustard in dishes, but we tried this meal for the first time months ago, and guess what? It turns out I like fresh dill and Dijon mustard as long as it’s not overpowering.
Hello Fresh has helped up branch out from the foods we typically make and enjoy. I’ve learned new ways to cook, have ventured out with different ingredients I would have never thought to buy or pair with my meals, and have really enjoyed cooking with the clean ingredients that Hello Fresh provides in every shipment.
Some of the meal options on the menu each week may sound out there initially, but I can honestly only think of ONE meal we have made and didn’t love, and we’ve been ordering Hello Fresh for over a year!
We subscribe to the Family Box plan which includes 2 meals for 4 people and costs $69.92. Each week, there are 9 meals to choose from, and I try to select the meals that have ingredients I may not have on hand, or include a number of ingredients that would add up if I chose to purchase them on my own.
And speaking of purchasing on my own, we choose to order Hello Fresh 1-2 times per month, but I often browse the menu each week and choose 1-2 of the meals for the inspiration for my 30-min meals for that week. Sometimes I make them exactly as they’re written on the website or app, and other times, I create my own recipe using the Hello Fresh version as inspiration.
With Hello Fresh, you can skip meals multiple weeks in a row or choose to order every week. It’s a flexible subscription service, which I love.
Though the cost is more than what I would spend at the grocery store if shopping for the same ingredients myself, I keep ordering because of the quality of ingredients we receive each week and the simplicity of each recipe (everything is measured for you!). And the kids love helping make our Hello Fresh meals too! They think it’s fun to pull out all of the ingredients from of the brown bag and love the mini jars and sample size measurements of the ingredients. 🙂

Ingredients:
1 tsp Fresh Dill, finely chopped
1.5lbs Yukon Gold Potatoes
1.5lbs Chicken Breasts
12oz Fresh Green Beans
4T Sour Cream
2 packets Chicken Stock Concentrate
1tsp Dijon Mustard
1/4 cup water
Olive Oil
Salt/Pepper to taste
Directions:
Preheat oven to 450. Cut potatoes into 1/2 inch cubes. Toss potatoes on a baking sheet with a drizzle of olive oil and a pinch of salt and pepper. Roast on the top rack, tossing halfway through, until lightly browned and tender, 22-25 minutes.
While potatoes roast, pat chicken dry with a paper towel; season all over with salt and pepper. Heat a drizzle of olive oil in a large pan over medium heat. Add chicken and cook until browed and cooked through, 4-6 minutes each side. Turn off heat; remove chicken from pan and set aside to rest.
While chicken cooks, toss green beans on another baking sheet with a drizzle of oil and a pinch of salt and pepper. Roast on middle rack until tender, 10-12 minutes.
Add sour cream, stock concentrate, dill, mustard, and water to pan used for chicken. Turn off heat, scraping up any browned bits on bottom. Season with salt and pepper.
Drizzle sauce over chicken (and green beans and potatoes if you wish!). Garnish with extra dill and serve.
