These tacos are so fresh and delicious! They are a variation of a Hello Fresh meal we have made in the past. The fresh kiwi salsa on top blends well with the salty taco meat mixture for a great, fresh flavor. Hope you enjoy!
Ingredients:
1lb ground beef
1/2 sweet onion, chopped
1 poblano pepper, chopped (tip: use gloves when chopping)
2 cloves garlic, minced
2 kiwis, peeled and chopped
1 cup grape tomatoes, halved
2T tomato paste
1 package taco seasoning
1 package chicken stock concentrate (I use this kind from Trader Joe’s)
1/4 water
1 lime
1/3 cup sour cream
cilantro, chopped
tortillas
Directions:
Saute pepper and onion in 2T olive oil until soft, 5-7 minutes. Add garlic and saute for additional minute. Remove from pan and set aside. Add ground beef and brown. Add tomato paste, chicken stock concentrate, taco seasoning, and water. Mix until well blended. Add pepper and onion mixture back to pan.
Mix together tomatoes, kiwi, juice from 1/4 lime, and salt. In a separate bowl, mix together sour cream, juice from 1/4 lime, and salt.
Cover tortillas with a damp paper towel and warm in the microwave for 30 seconds.
Layer ground beef mixture on the bottom. Top with dollops of sour cream, tomato mixture, and additional lime to taste. Garnish with cilantro.
