These cookies are not only tasty, but if you are a nursing mama, they will help with your milk supply too! The flax seed + brewer’s yeast help to increase milk supply, while the rest of the ingredients help to make these cookies so darn delicious. 😉
If you are not nursing, you can leave out the brewer’s yeast (the flax is still good for you!). I’ve also made them with almond flour for a gluten-free option (leaving out the brewer’s yeast as well).
Ingredients:
2T flax seed meal
4T water
1 cup butter
1 cup sugar
1 cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla
3 cups flour
2T brewer’s yeast
1 teaspoon baking soda
1 teaspoon salt
1/2 tsp cinnamon
1/2 tsp baking powder
3 cups oats
2 cups chocolate chips
Directions:
Preheat oven to 350°. Mix the flaxseed meal and water and let sit for 3-5 minutes.
Beat butter, sugar, and brown sugar well. Add eggs and mix well.
Add flaxseed mix and vanilla, beat well.
Sift together flour, brewers yeast, baking soda, salt, cinnamon, and baking powder.
Add dry ingredients to butter mix.
Stir in oats and chips.
Scoop onto greased baking sheet. Bake for 12 minutes.
Let set for a couple minutes then remove from tray.
This recipe yields about 4 dozen cookies. Hope you enjoy!
